                                                              Pumpkin Pasta

Ingredients:
400g pumpkin
1 large red onion
2 tablespoons olive oil
Salt & freshly ground black pepper around 2tsp
1 tsp chilli flakes
Garlic around 2 pods
Shredded Parmesan cheese 1/2 cup
water around 2 cups
Shell Pasta 1cup
Method:
  • Take a nonstick heavy bottom pan, add 2 tsp of olive oil.
  • Simultaneously start boiling water with 1 tsp of salt in another pan and add shell pasta to the boiling water.
  • Now add finely copped red onions, pumpkin, garlic pods which is finely chopped, chilli flakes and salt to heated olive oil and frying the mixture until half cooked(notice that pumpkin is half cooked when it starts becoming soft)
  • Strain the cooked pasta as it changes color while boiling and allow it to cool.
  • Now add the pasta to the fried mixture along with shredded cheese and mix well.
  • Serve with cracked pepper and more salt if needed.
